When it comes to getting dinner on the table fast, my go-to “secret shortcut” is using rotisserie chicken. They’re inexpensive, and all I have to do is shred it upto geta big head start on whatever recipe I happen to be making. (And I even have a shortcut to shredding the chickenclick here to see it!)

Recently, I got to thinking about all the recipes that can be made easier by using rotisserie chicken. So I gathered several of my favorite easy recipes from past blog posts, as well as several recipes from around the web, to share with you today!

So if you’re interested in some delicious ways to get dinner on the table in a hurry, here are 20 delicious options utilizing the humble rotisserie chicken.

First off….a recipe that I discovered and made recently that was a real crowd-pleaser: a flavorful Chicken Cordon Bleu Skillet. Yum!

1. Chicken Cordon Bleu Skillet

Ingredients:

  • 1 lb. penne pasta
  • 4 Tbsp butter
  • 2 cloves garlic, minced
  • 3 Tbsp flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Kosher salt
  • Freshly ground black pepper
  • 1 tsp. mustard powder
  • 2 cups shredded rotisserie chicken
  • 1 cup thick-cut ham, chopped
  • 2 cups shredded Swiss cheese
  • 1/2 cup grated Parmesan cheese
  • 1 Tbsp fresh parsley, chopped

Directions:

Cook pasta according to package directions until al dente. Drain the cooked pasta and set aside.

Melt the butter in a Dutch/French ovenover medium heat. Add the garlic to the pan and cook for about 2 minutes, until fragrant.

Sprinkle the flour into the skillet and cook for 2 more minutes, until the mixture is golden brown. Pour in the chicken broth and heavy cream, and bring the mixture to a boil.

Season with salt and pepper to taste, and add the mustard powder. Reduce the heat to medium-low and cook until slightly thickened, about 10-12 minutes.

Remove the potfrom heat and stir in the cooked pasta, chicken, ham, and Swiss cheese. Sprinkle Parmesan over the top.

Bake in the oven at 400 degrees for 13-15 minutes. Broil for an extra 2-3 minutes for a golden-brown finish. Garnish with parsley, and serve.
