It's no secret that this pregnancy has me craving mexican food. Like real, yummy, good, mexican food. Unfortunately it is really hard to come by where I live in Indiana, so I often make my own. When I was traveling a few months ago, I went to two different mexican restaurants that served the best, tableside-made guacamole. Fresh, homemade guacamole is amazing! I could care less about all the other guacamoles out there honestly. But fresh, homemade guacamole with the right spices and the right, fresh ingredients is simply amazing! So after some testing, I have come up with the yummiest, besthomemade guacamole recipe ever! Keep reading to snag the full recipe. Believe me you will want to print this and make it often!

Please note that this recipe makes a HUGE amount of guacamole. It is enough to feed a small army. I typically make about half of this recipe for my family so feel free to modify it to make the right amount for your family.

Also as a note, my kids would not touch guacamole until they saw it made right before their eyes. And now, they can't get enough of it! My daughter is always so excited when she comes home from school and sees avocados on the counter because she knows that means we are making guacamole! So if you have picky eaters who won't touch this green goodness, have them help you make it and I bet they will at least give it a try!

Ingredients:

  • (4) Avocados
  • ½ Vidalia Onion (more or less depending on preference)
  • 1-2 Tomatoes (use more if the tomatoes are small or if you like your guacamole with more tomatoes)
  • ½ Jalapeño (more or less depending on size of pepper and preference for heat)
  • ¼ bunch Cilantro (more or less to taste)
  • Juice of (1) Lime
  • ½ teaspoon Kosher Salt
  • ¼ teaspoon Paprika
  • ¼ teaspoon Chili Powder
  • ½ teaspoon Sugar
  • ⅛ teaspoon Cayenne Pepper

Directions:

  1. Chop onion, tomatoes and de-seeded jalapeño into small pieces. I use a chopper that I bought to make my life really simple, but a knife worksfine too. I like to chop my tomatoes at about ¼", my onions at about ⅛" and my jalapeño at about 1/16" because I like my tomatoes a bit chunkier and I like to not get quite as much onion or jalapeño in each bite. But really cut these how you prefer.
  2. Cut the avocados in half and remove the pit. Remove the skin from the avocado and place it in a bowl with the chopped tomato, onion and jalapeño. Skip a fancy avocado tool and use a rice cooker tool to remove the avocado from the skin instead. It works really well and keeps clutter down in your kitchen drawers.
  3. Chop cilantro and place in bowl too.
  4. Add salt, paprika, chili powder, sugar and cayenne pepper on top of everything in the bowl and squeeze the lime juice on top of the spices. Adding the lime juice on top of the salt will help the salt to dissolve. (Note that I always start with juicing just a half a lime and see where that takes me. Too much lime juice can make for a runnier consistency of guacamole and I like mine to stay fairly chunky. Since all limes come in different sizes with different juiciness to them, I always start small and add more as needed.)
  5. Use the rice cooker tool to mix everything together. You can leave it a bit more chunky or keep mixing until the guacamole is more smooth, however you prefer.

This entire recipe can be varied to your preference. For example, if you find yourself with an extra-large jalapeño, use less then I suggest! Remember you can always add in more later if you want a little extra kick to it. If you really love onion, go ahead and add more in. This recipe is a great place to start though and never leads me wrong! And it will give you the best tasting, mild guacamole you've ever had!

This is such a delicious and simple recipe and is a big family favorite at my house! This recipe makes a ton of guacamole and I usually make half of it to serve my family of 4 (two kids and two adults). But this large recipe would easily serve 6-8 people who love guacamole.

Ingredients

  • 4 Avocados
