My favorite rainbow dessert- Edible Cookie Dough Balls
My favorite rainbow dessert has to be these super simple no bake edible cookie dough balls, loaded with sprinkles. You can enjoy them in a bowl with a spoon or enjoy them in the shape of truffles. They are homemade with simple ingredients and ready in just 10 minutes. There is no need to turn on the oven either!
There are a few tips to keep in mind. First, if the dough is too dry and crumbly, mix in some milk to thin it to your desired consistency. If the dough is too sticky, mix in some flour to your desired consistency. Second, be sure to remember to heat treat the flour in order to make it safe for no bake desserts. Spread flour in a large baking tray and bake at 350 degrees F for 5 minutes. Third, use unsalted butter because the salted version makes these little bites too salty. Fourth, if it's too hard to roll dough into balls, chill mixture in fridge for 45 minutes - 1 hour to make it easier to handle.
With regards to variations, try different colors or shapes of sprinkles, other extracts and even other add-ins like chocolate chips, nuts, dried fruits, shredded coconut, chopped-up candy bars, roughly chopped Oreos. You can also dip them in melted chocolate. Consider filling them with a soft and chewy caramel or Rolo candy, which is a lovely surprise when you bite into them.
In terms of storage, leftovers can be stored in a sealed container in the fridge for up to 1 week or in the freezer for up to 1 month.

Ingredients
- ½ cup Butter Unsalted, Room temperature
- ⅔ cup Granulated sugar
- ⅓ cup Brown sugar
- 1 tablespoon Vanilla extract Use clear extract to prevent the dough from becoming dark
- 1 cup All-purpose flour Heat- treated
- 1-2 tablespoon Milk Or heavy cream
- ⅓ cup Sprinkles
Instructions
Cream together butter, granulated sugar and brown sugar until light and fluffy. This takes about 3-5 minutes.
Add vanilla extract, flour and mix until combined.
Mix in milk if the dough looks dry and crumbly.
Add sprinkles and gently mix it into the dough with a spatula.
Scoop out small portions of the dough and roll into balls and enjoy!
